Paleo Chocolate Chip Muffins are easy to make and ready to eat in about 30 minutes. These healthy chocolate chip muffins are sure to please anyone! With every bite, you get a taste of chocolatey goodness. To make these delicious muffins you will need a few ingredients; super fine almond flour, salt, baking soda, extra virgin olive oil, agave, honey, or maple syrup, eggs, vanilla extract, and chocolate chips.

The first step in baking these is to preheat the oven to 350℉ (180℃), line a cupcake pan with 12 paper liners, and move to the side. Next in a large mixing bowl, you will whisk together your 2 cups of almond flour, ¼ teaspoon salt, and ½ teaspoon baking soda. Then add in ¼ cup oil, ¼ agave, (you can also use honey or maple syrup) add 3 eggs at room temperature, and 1 teaspoon vanilla extract. Mix until well combined. Slowly fold together a  ½ cup of chocolate chips. Make sure to fold in the chocolate chips or else you can overwork the batter leading to dry, stiff muffins.  After that spoon your batter into the paper liners making sure that they are completely even. If they are not even some will burn and some will be raw so make sure to measure it out. Place your muffins into the preheated oven for 18-20 minutes or as long as needed. While the muffins are baking you can clean up your area and get out your cooling rack. At the tone of the oven beeping, put on your oven mitts and take the muffins out of the hot oven. Flip the muffin pan upside down placing the top part of the muffins on the rack, then pull up the tray. Flip the muffins so that they are lying flat on the cooling rack and let them sit for a couple of minutes.
